My 3 Ingredient Gluten Free Banana Pancakes are a quick and easy way to use up overripe bananas and can be prepared and cooked in around 10 minutes.
3 Ingredient Gluten Free Banana Pancakes
Servings: 2 people
Ingredients
- 2 medium overripe bananas
- 2 medium eggs
- 1/4 cup gluten free self-raising flour
- oil spray
Instructions
- Mash banana in a medium bowl until smooth. Whisk in egg, then flour until smooth.
- Set aside for 5 minutes.
- Lightly spray a medium non-stick frying pan with oil and heat over medium heat.
- Spoon 4 tablespoons batter into pan, creating a circular pancake shape
- Repeat with the rest of the mix.
- Cook for 1 ½ – 2 minutes on each side.
- Serve with honey and sliced banana.
